Tempeh, Sweet Potato Salad

I want to learn how to cook delicious tempeh so I tried recreated Sweet Potato Soul's marinade and it came out well! Before I marinaded the tempeh, I cubed them into bite sized pieces and steamed them for about 3-5 minutes. I marinaded them for about an hour and a half and browned them on a non-stick pan. Then I poured the remaining marinade back over the tempeh. I ate them in a salad with my mom's usual dressing, roasted sweet potato and cucumber.

  • ¼ cup apple cider vinegar

  • 2 tbsp tamari soy sauce

  • 2 tbsp maple syrup

  • 3 tbsp stone ground mustard or dijon mustard

  • 1 tsp fresh black pepper

  • ½ tsp cayenne pepper
