Anything But Rice


My dad thinks we eat too much rice so I am trying to find vegan recipes which are simple, tasty, nutritious and use other grains. We had a bag of bulgur in our pantry so I tried to find something we could make with it. I looked into Veganomicon (by Isa Moskowitz) and found a good looking recipe for which we had most of the ingredients (find below). I followed the recipe below exactly except for quickly mixing the onions with lemon juice and roughly chopping the arugula. I also left out the mushrooms because we didn’t have any. We ate the dish with roasted asparagus and I thought it would have also been good with chopped tomatoes and some seeds. I also think it would have been good with the mushrooms but maybe cook them quickly before hand.

I thought this was a great recipe which is delicious on its own but could also be mixed with many other things.
