First Eco House Dinner

Tonight was my first night cooking dinner for the whole house and it came out really well. I wanted to make a 'buddha bowl' kinda thing with rice, chickpeas, cauliflower and kale and it all came out delicious.

Kale:

  1. wash kale

  2. slice into ribbons

  3. squeeze over a bunch of lemon juice

  4. massage kale until tender

  5. I added salt, pepper and garlic powder but you can leave this out

Chickpeas:

  1. drain and rinse can of chickpeas

  2. coat in oil, salt, pepper, paprika, cumin, curry powder, turmeric, chili powder, garlic powder and whatever other spices you feel like

  3. place in single layer on baking dish w/ parchment paper

  4. cook in 425 oven for abt 30 min

Cauliflower:

  1. wash and cut cauliflower (i used slightly thawed frozen cauliflower and it came out fine)

  2. place on baking dish w/ parchment paper

  3. spice w/ same spices as chickpeas

  4. cook in 425 oven for abt 25 min

Rice:

  1. saute chopped onion

  2. add 1 part rice to 2 parts water

  3. add little less than 1 tsp salt per cup rice

  4. cook for amount of time specified on rice packet (~20 for white, ~45 for brown)

Almond Sauce

I didn't use measurements for this one so I just eyed/ tasted everything... would have also been good with tahini

  • almond butter

  • lemon juice

  • soy sauce

  • hot water

  • chili pepper

  • pepper

  • salt

  • garlic powder

  • turmeric

  • paprika
